Duck legs with apple sauce & ginger, one pot

Indulge in the exquisite flavours of our Venison Terrine with Wild Fruits recipe, where the rich, gamey essence of venison is beautifully complemented by the sweetness of wild fruits, resulting in a sophisticated dish that’s a true gastronomic delight.

Ingredients

  • 1 tbsp rock salt
  • 1 tbsp cracked black peppercorn
  • 3 ginger slices, finely chopped
  • 1 Cauliflower (cut in small bunches)
  • 16-20 new potatoes
  • 2 tbsp olive oil
  • 4 duck legs on the bone with skin
  • 200 g Sprinks Farm apple sauce (or cooked apples with sugar, honey, lemon juice)

Method

  1. Warm the oven to 170 °C /gas mark 5.
  2. Mix rock salt, crushed peppercorns, ginger, and olive oil in a small bowl.
  3. Rub this mixture all over the duck legs and leave to marinate for 30 mins.
  4. Place whole new potatoes, cauliflower and place the legs on top.
  5. Pour over the apple sauce cook in the oven for 2 ½ hours.
  6. Turn off the oven and leave to rest for 30 minutes in the warm oven before serving.
