Sprinks Farm Herb & Garlic Lamb Leg

Ingredients

  • Leg of lamb
  • 8 cloves garlic
  • 2 tablespoons salt
  • 2 large onions
  • Olive oil
  • Bunch of fresh parsley leaves or nettles
  • 2 allspice balls
  • 2 juniper balls

Method

  1. Mix the pressed garlic with salt. Rub this mixture into the leg and then lightly brush the leg with olive oil. Let it rest for an hour.
  2. In a deeper baking sheet we put the onions cut into strips, spices, herbs, 1 tablespoon of olive oil and pour everything with broth or water. We can bake the leg in two ways. On the grid or directly in the sheet.
  3. Bake together as needed (40 mins per 450g/lb, plus an extra 20 mins at 160 degrees.
  4. Half the time we turn the meat over. We continuously add water to the baking sheet and sometimes pour the leg with baking.
  5. After baking, pull out the meat and portion. Remove the spices from the pan and blend everything until smooth.
