Tray Baked Venison with Marmalade Jus

Elevate your dining experience with our Tray Baked Venison with Marmalade Jus recipe, where tender venison meets a luscious marmalade jus, creating a harmonious blend of savoury and sweet flavours that will leave you wanting more.

Ingredients

  • ½ medium onion
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • 100g venison tenderloin
  • 1 tbsp marmalade or onion marmalade (depending on taste)
  • ½ tsp finely chopped fresh ginger
  • 1 clove garlic, finely chopped
  • 1 small chilli (heat to taste)

Method

  1. Preheat the oven to 170/150 fan.
  2. Slice the onion and place in a roasting tin.
  3. Sprinkle over nutmeg and ground ginger, plus 3 tbsp water (or white wine).
  4. Place in oven for 10 mins.
  5. While the onions brown off, seer venison tenderloin in a hot pan and place to rest.
  6. After 10 mins, place the tenderloin on the onion base and, ensuring that there is still liquid visible in the base of the roasting tin, return to the oven for 20-25 mins.
  7. Remove the venison from the oven, cover and place on one side to rest.
  8. Heat a little oil and add the garlic, chilli and fresh ginger in a pan.
  9. Add the marmalade and melt to liquid.
  10. Place venison on a plate and pour or spoon over the marmalade jus.
  11. Serve immediately.
