Venison and Plum Stew

Elevate your culinary experience to the next level by indulging in the exquisite flavours of our Venison and Plum Stew, combining succulent venison with the sweet and tangy notes of plum.

Ingredients

  • 1 medium onion
  • Root vegetables
  • Potatoes
  • Plums
  • Cooking apples
  • 1 clove garlic, finely chopped
  • 300ml beef or venison stock
  • 250g diced venison steak
  • 1 spring of thyme
  • Worcestershire sauce to taste

Method

  1. Preheat the oven to 170/150 fan.
  2. Saute venison in a hot over proof pan with a little olive oil for 5-7 mins.
  3. Put venison on one side, add diced vegetables to the pan and saute for 8-10 mins until they begin to soften.
  4. Add garlic, chopped apple and thyme and saute for a further 1-2 mins.
  5. Add plums, stock and Worcestershire sauce and bring to the boil.
  6. Return the venison to the pan, stir well and cover.
  7. Place the covered pan in the oven for 1 hour.
  8. Stand for 10 mins then serve with crusty bread.
